This is such a great recipe! I did not have access to a grill so I roasted the vegetables instead. I added a couple of portobello mushrooms to the mix as well. I served to meal for myself & my sister (we are both vegetarians) and two friends that are both meat-eaters. Everybody LOVED it! No leftovers :)

AWESOME!!!!!! People just don't expect this sandwich to be this good. Ive used sourdough bread everytime I've made it. Any good bread would be great with it honestly though.

This sandwich is great for dinner or lunch. I add sliced avocados to this and use ciabatta instead of focaccia. They are easier to eat if you make them open faced, plus you can stack more veggies on it that way.

This was just awesome. I made a few variations. The main one being that instead of using olive oil I did a combo of balsamic vinegar mixed with brown sugar and brushed on top of the veggies to give it more of a zesty taste. I also used the broiler on the oven instead of the grill, and I added mushrooms to the mix. This is definitely a restaurant quality sandwich and we'll be making it again for sure!

A great hit whenever I make this, with many variations! One thing which gives a very different flavor is substituting lemon juice with a tangy pickle, cut into tiny pcs.. or chopped sundried tomatoes (marinated in herbs & olive oil)

I have found recipes on here that have rave reviews before & when I try them, I'm not that impressed. I kind of thought that was going to happen here, but this really is a fantastic recipe. I've had it 2 nites in a row. I used lower fat mayo & really didn't taste a difference since there's so much flavor already. I did add some sun dried tomatoes to my mayo mixture. Also, I don't care for feta so I used marinated mozerella that I got from Trader Joe's which made it really special. We tried regualar mozz & it just wasn't as good. I also grilled some asparagus since I'm a big fan to add to the sandwich. Can't wait to have it again!

Absolutely Delicious!!! I had to make just a few changes...didn't have any lemon juice, so I substituted red wine vinegar. Served it on a red pepper panini bun. Yummy:)Thanks for sharing.

Yum! My meat and potato hubbie ate his and 1/2 of my son's. Even my 7 yr old loved it, it was just too much. All on a stove top grill pan, I grilled the squashes, red onion, red pepper and lightly warmed tomato since they tend to fall apart with too much grilling. Next time I will lightly toast the focaccia before putting on the spread although my hubs loved it as is. Don't skimp on the feta, it makes every bite better! So so good.

Oh wow!!! This was AMAZING! I love food that makes my mouth happy! I don't even know where to start! The veggies and caramelized onions, with the warm crunchy grilled bread , and the tangy aioli and feta. The flavors melded together beautifully! Definitely a new favorite. It was also very easy to prepare! Loved it!

I would have given this a 5 star but my husband didn't like the zucchini in it. Maybe i will try it but substitute egg plant and see how that goes. Very tasty otherwise.
