Normally I do not enjoy zucchini very much but loved it in this recipe! It was so yummy! This recipe was also very easy to make and put together. I followed the directions except used canned corn instead of frozen. We put it in corn tortillas and topped with cheese. We will make this again!

Very good. I used a combination of zucchini and yellow squash and replaced the poblano pepper with a jalapeno. Very tasty and refreshing, thank you :)

This is my favorite side dishe with all mexican entrees. It has it all, veggies, grains and beans. The only thing I change about it is adding some cumin, about a teaspoon and some chopped cilantro at the end for mor flavor.

Easy! I prepared this the night before and carried it to a pitch-in. It was a great side with the fajitas that were served. I did add a can of tomatoes and chilis. I am glad I did. I think it would have been a bit bland. It was also great warmed up and covered with a bit of cheese. I'll make it again.

This was SO yummy! The only thing that I changed was that I didn't use black beans...I thought that I had a can, but I didn't. Next time, I will make sure I do. I kept thinking of all of the great ways you could serve this...as a side dish (which is what I did), or over rice, as taco finning or even veggie enchiladas...I am definately going to experiment with this one!

My family enjoyed, but I added about twice as much Poblano as the recipe called for. I would like to try some of the other ideas such as adding cheese and an avocado next time!

I made this for my family as a side dish with chicken enchiladas and it was huge success. I added sweet cherry tomatoes on top just before serving. My husband told me he had never liked black beans before, but he loved the dish.We like spicy food so I sprinkled a little Fiesta seasoning on top & tossed, I think you could sprinkle a little bit of Taco seasoning instead and it would be just as good.

Really good! Tasty, easy, quick and cheap-a real winner! I added a can of Rotel and some Mexican seasoning blend as the recipe was a touch bland as written (which is the only reason for the 4 star rating). With the additions, it was awesome! Served it in tortillas with cheese-yummy and healthy too! We'll be making this regularly. Thank you!

This was pretty good. I added a can of diced tomatoes and a pinch of ground cumin seed. Will make again - inexpensive and packed full of nutrients.

I love green chilis so I add them. I omit the beans. I dice everything but the garlic. That I mince. And where are the tomatoes? I didn't have any fresh so I put in a can of Ro*Tel. Tomatoes really add something for me and so does the pepper jack cheese I had on hand. I also added Texas Gunpowder which is dried ground jalapeno in a shaker. I needed more salt too. My husband eats this with sour cream on a tortilla and loves it (so do I). We aren't vegans so if I have it, I'll even add some leftover pork or chicken. You really can't mess this up. You gotta love that!

This is a great recipe that I have fixed for years, but I added a can of stewed tomatoes and some oregano and basil which really adds to the flavor. I also only use about 1/2 an onion. My family loves it.

This was exactly what i was looking for. I thought it was very good and light side dish. Or you could put on a burrito, taco or any type of wrap. My friends didn't really care for it though (they are kinda picky eaters anyway).

I really like this recipe! Easy, lots of veg. Needed a little more seasoning, since I don't like spicy food and omitted the poblano. I also tried it as is and then with a can of diced tomatoes. The tomatoes definitely added a lot to the flavor. Thanks for the recipe!
