I mixed this up exactly as directed and loved it just the way it is. Nice, balanced blend of flavors; and I particularly appreciated that it it didn't define and distinguish itself with its "heat." I used it three different ways for tonight's dinner alone: in "Cajun Pasta Fresca," in Wood Halsey's "Cajun Chicken," and on its own as a chicken rub. It was excellent in all three.

Delicious! Left out the salt due to health restrictions and it was still delicious! Will be making a larger batch to have on hand!

I make a lot of spice mixes. This one was just ok IMO. For me Cajun means a bit of heat. I replaced some of the chili powder with hot new mexico chili powder. I cut the salt back & used a good quality sea salt.

I will never pay for the pre-blended mix again. This saves money and tasted great in red beans and rice. Can't wait to try it rubbed on grilled chicken.
