Easy to make and I always have the seasonings on hand besides the white pepper. I used Oregano instead.

I try to minimize my salt intake, so have been making my own herb and spice mixes for years. This recipe is similar to one I make, but I add about a teaspoon each or oregano and thyme. I omit the salt entirely for storage, and though I may add some in for cooking certain recipes, I often don't bother. The other ingredients provide plenty of zip on their own.

The other reviews for this were quite helpful. I cut the salt down to 1/4 tsp. for a HALF batch. It was just enough spice for my Cajun Meatballs. This was just what I needed, thank you.

Took one star away because it was too much salt for the family. Gotta watch that stuff so I halved the salt. Also doubled the black pepper as I didn't have any white pepper. Otherwise a wonderful spicy mix. Saved me from running to the store for cajun seasoning. Now I don't have to buy it any more!

I use this as the base for every Cajun recipe I've done so far (use 1 to 1 1/2 Tbsp. of salt vs. 2). Whenever anything calls for Cajun seasoning this is the one to use. Don't bother going to the grocery store to purchase a mix, just use what you probably already have on hand. It will come out better and fresher (no preservatives) that way!

This is an awesome seasoning for the grill or for a cajun pasta dish. I tweeked it a little adding some tyme and oregano to taste. Absolutly worth while.
