Cajun Seasoning Mix
SUBMITTED BY:
Joy Rackham

"In Chimacum, Washington, Joy Rackham uses this fiery blend to add spark to baked sweet potato wedges. Or try the spicy mixture on pork, chicken or beef for a boost of zippy flavor."

Great recipe, I would rather make Cajun seasoning myself rather than buy it in the store. Just make sure your spices are fresh (within 6 mos). I ended up only putting in 1/2 the salt the recipe called for because with the 2 Tbls. that was WAY too much salt!

I use this as the base for every Cajun recipe I've done so far. Whenever anything calls for Cajun seasoning this is the one to use. Don't bother going to the grocery store to purchase a mix, just use what you probably already have on hand. It will come out better and fresher (no preservatives) that way!

Took one star away because it was too much salt for the family. Gotta watch that stuff so I halved the salt. Also doubled the black pepper as I didn't have any white pepper. Otherwise a wonderful spicy mix. Saved me from running to the store for cajun seasoning. Now I don't have to buy it any more!
