INGREDIENTS
5 cups beef broth
2 cups uncooked long grain rice
1 pound ground beef
1 medium onion, chopped
1 cup sliced carrots
1/2 cup sliced celery
1/2 cup frozen corn
1/2 cup frozen peas
1/2 cup chopped sweet red pepper
1 teaspoon salt
1 teaspoon Cajun seasoning

DIRECTIONS
In a roasting pan, combine broth and rice; mix well. Cover and bake at 350 degrees F for 30 minutes. Meanwhile, in a skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Add to rice with vegetables, salt and Cajun seasoning; mix well. Cover and bake 30 minutes longer or until rice is tender.

LOVED IT! Both DH & 4yr old son are picky eaters & they practically licked the dish. I added precooked cajun sausage to it. Thanks for the recipe!

My husband and I didn't care for this dish. I added minced garlic to the meat mixture as well as 4 oz. of tomato sauce and some cut up tomato to the rice mixture. It was rather bland and, as other reviewers said, is missing something.

Pretty good, but it needs something. Tomatoes? Less rice? Eggplant? More spices... I'm not sure.

This was an awesome dish, however I got carried away with the cajun seasoning and added more than the recipe called for. My husband loves this dish.

I made this for supper last night and it was a big hit! Hubby had 3rds!! I used frozen mixed vegetables and added 1/2 a can of tomato paste (because I had no broth). Deee-lish!
