This recipe is amazing! The only thing I changed was to use half parsley and half fresh basil and add in a handful of chopped spinach. I used fresh tomatoes and the full TBLS of salt. If I used canned tomatoes, this might have been too much salt. However, with fresh tomatoes, it was perfect. I must agree with some other reviewers who said the Cajun spice you use is crucial. I used a very good Cajun spice mix. I also served this with the blackened chicken found here. I used my own Cajun seasoning on it, as well. Wonderful meal! This is one of the best recipes I have ever made from this site, and I make LOTS of recipes from here! Thanks so much for this delicious, simple recipe!
