Used 1lb of meat...onion flakes.....rotel instead of can tomatoes.....added 1 can red pepper ranch beans, 1 can corn, garlic powder and used the velveeta mac & cheese shells.

I made this for my grandchildren this weekend. I made my own cajun seasoning and only used 1 teaspoon because my grandson (he's six) doesn't care for spicy too much. They both had two helpings and I still had left overs for my lunch this week. I'd like to make again and kick up the spices. The hardest part of this recipe is chopping the veggies which my granddaughter helped me with.

I made this exactly as written, and used my own homemade cajun seasoning. My husband and I both loved it and it will give us each a full serving for work lunch leftovers too.

I thought this was a great recipe! My husband loved it! I added garlic powder, salt, pepper, 1/2 cup of shredded cheddar cheese, and Lawry's Seasoning. I also left out the celery and the green peppers and instead of a can of diced tomatoes I used a can of Rotel. Oh and I used the Kraft Deluxe Mac & Cheese, and instead of 1/2 lb of ground beef I used 1lb. This is a keeper. Thanks for sharing!!

This is an excellent recipe to doctor up a box of mac and cheese. I was also surprised how much it made. I pre cut up the veggies before work so this was a quick throw together meal for after work. I really liked the sauce.

I had made no-salt Cajun seasoning and am always on a search for ways to use it. I felt this recipe was a great find; also a good way to squelch my Mac & Cheese craving. The only thing I had to do differently was use Gluten-Free Mac & Cheese. Next time, I may add more onions (as I love them) and cut down on the green peppers, even though I know the "trinity" is not supposed to be lopsided. Thank you June for sharing your recipe.

I love this recipe and have made it several times. The only thing I left out was the celery since I HATE celery. LOL But otherwise than that, I didn't change the recipe. I've added a picture to show people how mine came out.
