I made this exactly as directed.My family prefers a ceasar with fresh beaten eggs and a little more lemony flavour. This recipe is very rich more so than the kind made from scratch (somewhat like the Renee's brand)and the quantity of ''sauce'' is more than you'll need for 1 head of romaine, you could probably generously cover 2 medium heads. We also found that it was a little over the top in the garlic department , BUT I used fresh-from-the-garden garlic that is flavourful and juicy, so it could be that. I won't make this again as it is written, just too rich and too garlicky.

Im in chicago and often go to jewel grocery store to get a caesar salad from the deli department so i decided to try this salad and wow it is the same taste all around great i thought i would never be able to make at home

I have been looking for a good Caesar dressing for a very long time and decided to try this recipe. I don't like anchovies so I left them out, added an extra garlic clove, instead of 3/4 mayo I did 1/2 mayo and 1/4 fat free yogurt and an extra squeeze of lemon juice. It is truly the best caesar I have ever had! I don't miss the anchovies or the traditional egg yolk at all, as a matter of fact it is much better without them! Will be making this a lot in my family!

Wonderful! I've been looking for a recipe that does not call for raw eggs or the pasteurized egg product and this will be a keeper!!! I dared to make this the first time for a dinner party and it was a hit! My substitutions: I replaced mayo with organic greek yogurt and used anchovy paste. It was a bit runnier than I would've liked, perhaps due to the yogurt/mayo switch, but it was not at all a problem. I also put everything in a small food processor as suggested and it was great.I made the croutons with home baked whole wheat focaccia and baked the croutons instead of sauteeing them. Thank you so much for sharing!

I'm only rating the dressing, I did not make the croutons. But the dressing was UNBELIEVABLE! Tasted like something from a fine restaurant. I didn't do anything different except omit the anchovy fillets. It was delicious. I bought a bag of caesar croutons. I also added some fresh shredded parm for the perfect look. SOOOOO GOOD, people! You must make it.

I love this dressing. I will omit the olive oil and use the dressing as a sandwich spread. It is so delicious. I don't care if it isn't authentic.

This dressing is outstanding! We love it. I've made it a few times now. I had to make it a bit healthier though, so I split the mayonnaise portion 50/50 with light mayo and plain greek yogurt. I swear you can't tell the difference! So yummy!

Very good. I added the oil (maybe 1-2 tsp) of the anchovies' can. It seemed so thick! Put it all in the food processor. Very easy.
