Recipe by Mrs. Mertel
"This can be a quick last minute appetizer or something you can throw together quickly to take to a pot luck. Generally I always have these items on hand which adds to the ease. I have also subbed out other dressings like Green Goddess with fantastic results.
I love it because it looks impressive, yet it is easy to make. Serve immediately or you may put the platter in the refrigerator for a few hours."
Hmm. None of these ingredients are on sale today.

romaine lettuce, ribs removed
Caesar salad dressing
shredded Parmesan cheese
Preparation was easy. Added croutons because...what Caesar Salad doesn't have croutons? Besides, I had to use them up. If you want to make this a really solid appetizer/side then use a good Caesar dressing, or better yet, make it yourself. As written, it could have used some serious jazzing up with fresh lemon and black pepper. Glad I added the croutons, they were missing a huge crunch. Would I make these again? A solid maybe.
