Buttery Lemon Spinach

INGREDIENTS

  • 2 (10 ounce) bags pre-washed fresh spinach
  • 2 tablespoons garlic, minced
  • 5 tablespoons butter
  • 2 tablespoons lemon juice

DIRECTIONS

  1. Rinse the spinach and place the leaves into a microwavable serving dish. Add the butter, garlic and lemon juice. Cover with plastic wrap. Steam in the microwave until the butter is melted and spinach is wilted, about 2 minutes. Remove the plastic wrap and toss to distribute seasoning before serving.

I microwaved on high for 3 mins to get it perfectly between too under-done and too wilted. Used 1/2 olive oil and 1/2 butter. I also listened to another reviewer and added some red pepper flakes. It was great, and I will make it again.

Delicious.....I omitted the butter and used olive oil instead. Loved the freshness of the lemon juice and I added a little red pepper flakes for some heat. Will make again!

This was a very good side dish and was very tasty. I followed the firt review and used olive oil instead. I will definately make it again!
