INGREDIENTS
1 cup butter (no substitutes), softened
1 cup confectioners' sugar, divided
2 cups all-purpose flour
1 teaspoon vanilla extract
3/4 cup chopped almonds

DIRECTIONS
In a mixing bowl, cream butter and 1/2 cup confectioners' sugar. Add flour and vanilla; mix well. Stir in almonds. Shape into 1-in. balls. Place 2 in. apart on ungreased baking sheets.
Bake at 350 degrees F for 13-16 minutes or until bottoms are golden brown and cookies are set. Cool for 1-2 minutes before removing to wire racks to cool completely. Roll in remaining confectioners' sugar.

Wow these were great! In fact, I'm eating one right now. The really cool part about it was that I happened to have all 5 indredients on hand and was able to whip these up in a flash. These taste just like the ones my grandma used to make. Sadly, they were not a favorite of the kids mainly because of the almonds, but oh well. This just means there are more cookies that I don't have to share!! Thanks for the great recipe.
