I was looking for something a little different to make as a thank you for our neighbor for feeding our pets while away. He likes Mrs. Siggs snickerdoodles from this site. I found these and happened to have everything in my pantry. They are a nice little change. I made them as directed with 2 little changes. I used 1/2 butter flavor Crisco and 1/2 butter. The recipe did not specify if the almonds needed to be roasted-mine were blanched only, so I toasted them in a dry pan first. The lemon extract is a nice little hint of lemon, so if you don't have any, a tsp of lemon juice or zest would work--or just omit. No worries!
