Something lovely happens to brown sugar when it gets hot and bubbly. For this pie, brown sugar combines with milk, eggs and butter and becomes a rich, gooey butterscotch. This thick, creamy filling is poured into a pie shell and baked. It 's absolutely fabulous with dollops of whipped cream.

Brown sugar and a few other ingredients are cooked slowly in a double boiler until thick and golden, then the mixture is poured into a baked pie crust. A meringue is whipped up and spread over this sweet, creamy filling, and the whole pie is baked until the meringue 's peaks turn golden brown.
