INGREDIENTS
1/2 cup cold butter or margarine
1 cup all-purpose flour
3/4 cup chopped pecans, divided
1 (8 ounce) package cream cheese, softened
1 cup confectioners' sugar
1 (8 ounce) carton frozen whipped topping, thawed, divided
3 1/2 cups milk
2 (3.4 ounce) packages instant butterscotch or vanilla pudding mix

DIRECTIONS
In a bowl, cut the butter into the flour until crumbly; stir in 1/2 cup pecans. Press into an ungreased 13-in. x 9-in. x 2-in. baking pan. Bake at 350 degrees F for 20 minutes or until lightly browned. Cool.
In a mixing bowl, beat cream cheese and sugar until fluffy. Fold in 1 cup whipped topping; spread over crust. Combine milk and pudding mix until smooth; pour over cream cheese layer. Refrigerate for 15-20 minutes or until set. Top with remaining whipped topping and pecans. Refrigerate for 1-2 hours.

This recipe is easy and delicious! I made it for fathers day and it was devoured! The only change I would make next time is to use a 12oz whipped topping. The top layer was a little sparse.

I took this to a large meeting and it fed 24 very appreciate dessert lovers including myself. Wonderful!!! I did need to make a second batch of the pecan crust as the ingredients weren't enough to cover the bottom of the 9x13 dish. Next I'll try the reviewer who suggested pistacio pudding in place of the butterscotch.

I entered this recipe in a family reunion 'best recipe contest', and although it didn't win first place, the identical recipe made with pistachio pudding (submitted by my brother in law) did win first place!

I've been making this one forever and everyone always likes it. You can sub in chocolate pudding for the butterscotch and I always top mine with chocolate chips or shaved chocolate. YUM!

I have made this recipe or a variation of it for years. I get lots of compliments every time I bring it. I usually top it with toasted coconut though.
