INGREDIENTS
1 cup butter flavored shortening
1/2 cup sugar
1/2 cup packed brown sugar
3 egg yolks
1 tablespoon water
3 teaspoons vanilla extract
2 cups all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup butterscotch chips
MERINGUE:
3 egg white
1 cup packed brown sugar
1 cup chopped walnuts

DIRECTIONS
In a mixing bowl, cream shortening and sugars. Beat in egg yolks, water and vanilla. Combine the flour, baking soda and salt; gradually add to creamed mixture. Spread into a greased 13-in. x 9-in. x 2-in. baking pan. Sprinkle with butterscotch chips and pat lightly.
For meringue, in a small mixing bowl, beat egg whites until stiff peaks form. Gradually add brown sugar, beating well. Spread over chips. Sprinkle with walnuts and gently press into meringue. Bake at 350 degrees F for 25-30 minutes or until golden brown. Cool on wire rack. Cut into bars. Refrigerate leftovers.

quite tasty, a variation of a recipe i have, all said they prefer mine, which are simpler to make and fewer ingredients, meringue browned nicely on top but not all the way through, was a marshmallow consistency, not very flavourful all in all until I refrigerated them to firm them up, the next day they were a much better consistency and much more flavourful. might do them again some time but in no hurry to do so

I thought these Bars were addictive! I only made slight changes: as I didn't have any butter flavored shortening, I used half a cup of regular shortening and half a cup of butter. These turned out marvelous, my father-in-law even requested that I make them again for our Father's Day dinner!!

I am not what you would call a very good baker. I needed to make something for Christmas dessert. I followed this recipe to the letter! It was incredibly easy with a wonderfully sophisticated taste. I will make this every year for the rest of my life. It is now a family tradition.
