Apple Dumplings I

Whole apples are placed on a square of pastry, slathered with red currant jelly, and coated with a rich mixture of brown sugar, butter and spices. The pastry is then pulled up around each apple and sealed. For the baking, these lovely dumplings are basted with sweetened apple juice.

These are the apple dumplings my grandmother used to make: warm, flaky, sweet, and drizzled with a sauce that bakes right with them. These are not difficult to make, just a little time-consuming. Serve warm with whipped cream or ice cream.

First you make a traditional apple pie filling, and then things get more interesting. Half the apple mixture is spooned into a deep-dish pie shell and layered with caramels and a taffy mixture. And then more apples, caramels and taffy go in. And then it 's baked and served warm. 

Apple Butterscotch Crumb Pie

Sliced apples, raisins and walnuts are sugared, dusted with cinnamon and nutmeg, and piled into a pastry shell. A sweet crumbly topping is sprinkled over the top. The whole pie is then loosely covered with aluminum foil, and baked until golden and brown.

Paper-Wrapped Apple Pie II

My grandmother used to make this pie when we had Christmas at her house. She used a paper bag to cover the pie, but in the updated version we use parchment paper. It is a very old recipe. Enjoy! 

Fresh Apple Tarts

The pastry for these tarts is sweet and buttery and will melt in your mouth. This recipe makes 16 tart shells that are filled with a sweet mixture of apple, walnut and apricot jam. The edges of the dough are pulled up and over each tart and sealed before baking.

Cranberry Apple Pie III
