I sauteed the onions for a few minutes and added some BACON. Yummy! In my opinion the bacon made the recipe. My family really liked it. I'm not a huge squash fan and I definitely don't like it mushy. This was very good, but I think next time I will try adding another egg. I will report back if It turns out well. I am thinking of serving this for thanksgiving.

We LOVED this, anything baked with cheese is always a family favorite. This was a wonderful way to get the kids to eat some veggies. I think next time I'll add less chopped onion and grate the rest.

I just made this - it is FABULOUS! The only things I did differently were that I sauteed the onion in 1 tablespoon of butter and some salt/pepper, and I used a combination of corn flake crumbs and brown sugar for the topping. Also, when I baked the squash initially, I also put a tablespoon of butter on each side, and sprinkled cinnamon and nutmeg on it. It is FABULOUS! I am totally making this for Thanksgiving - thank you Marianna!!

This was really good, I have only had butternut squash once before and it wasn't as tasty! I trimmed it down, I used 2% cheese, fat free half and half and sauteed the onions in water with some Hormel bacon bits. I also used the poultry seasoning. For crackers I used some AllBran Garlic and Herb and dotted with reduced fat butter. It was awesome! I think next time I will use pureed onions and maybe try some swiss cheese and garlic to add in. I will make it again! Awesome recipe!

Absolutely delicious. I am recently unemployed so have been doing more cooking at hime, and thought I had bought a spaghetti squash, so needed to find a recipe quick for butternut squash and other things I already had in my kitchen. This was easy, tasty and my boyfriend loved it. And he hates squash. I had to use breadcrumbs because I didn't have the crackers - but it was still good. Definitely going to try to Thanksgiving. Thanks for sharing!

This was great!!! We had Salisbury Steaks and this was a perfect side dish for it!! It tasted great it was like it almost melted in your mouth!! :) YUMMY!

This was just "ok" for me. I'd give it 3 stars, personally, but my husband and kids dug into it, so I gave it 4. I thought it was really bland and the texture was kind of weird. I took the suggestion of sauteeing the onion first, and that was a great tip because it would have been horrible otherwise. The squash just needs something to spice it up for me. I'm used to eating squash with cinnamon, nutmeg, etc - your typical "fall spices", so maybe I'll add some of that the next time. I'll definitely try it again since the kids and hubby liked it so much. It just needs some help to make it good for me.

i was looking for an alternative to mashed potatoes... trying to trick my 2 year old into eating vegetables, more like... and this is wonderful. first time i made it i sauteed the onions first (as suggested), the second time i didnt have time to do it but it turned out fine. i like to spread it out in a casserole dish and get happy with the cracker crumbs!

used more cheese (sharp) than was called for since we're cheese lovers and doubled the crackers. plus, i melted the butter and mixed the crackers with it then put it on top of the squash. overall, i thought it tasted like butternut squash - no difference really, even with the cheese in it. i didnt taste the cheese at all. i was looking for a recipe that would jazz the squash up and get my kids to eat it, but this recipe wasnt the one unfortunately.

Great recipe. Boiling the squash was way easier than backing it. When I was done, I scraped the squash off the skins. I loved it so much and it was so easy, I now plan to make it as a side dish for a friends wedding for 80 people.

I cooked and tried butternut squash for the first time. I am not sure if I like it or not. It is a different taste. To be totally honest, I don’t have anything to compare it to. This was a new adventure, because I saw the butternut squash in the supermarket. I don’t regret trying the recipes. Thanks for sharing.

Definate change...steam the butternut...it is delicate squash that holds its flavor and form better if steamed. I added steamed carrots for a difference in texture...I love adding depth and adding extra veggies does that.

This was an awesome dish! I didn't have much cheddar so I added some cream cheese too...wow what a great idea that was!!! Very creamy and tasty. I prefer corn flakes as a topping and they topped this dish perfectly. Can't wait to eat it again!

This was very good. I usually read a lot of reviews before I make a dish but was in a hurry today and did not do so before making this. I agree with cooking the onions before mixing with the other ingredients. I saved a lot of time by using pre-packaged mashed butternut squash. This was very easy and quite tasty. I'll be making this again.

I enjoyed this recipe but, as others suggested, I would cut the amount of onion in half, cut smaller, and saute before adding to the mixture. As written, the onion is too overpowering. Other than than it is perfect.
