Made for Thanksgiving '08. This was quite good and very easy to make. The adults enjoyed it, but, the kids... not so much. Made homemade rosemary crackers to serve along with it.

Excellent!! It made a great appetizer for Thanksgiving. It will hold the crowd over until the turkey is done. I used a low sodium vegetable broth and just added a little lawry's seasoning.

This bisque was fantastic!!! I used olive oil, increased the butter (butter light) to one stick, added more onion, roasted my squash, one cup chicken stock, garlic, one green apple, simmered with a bundle of fresh thyme, cayenne pepper, orange juice, and 1/4 cup cream. I like to make food with a TON of flavor and thought if I had not added all the extras it would have been a bit bland. This soup was a HUGE hit at a dinner party I had last evening!!!!!

This recipe is awesome! I didn't even use onion because I didn't have in on hand. Roasted the squash and used pureed carrots I had made for my 8 month old. I added a pinch of cinnamon along with the nutmeg. Loved it! Thanks for posting!

What an easy, cheap and delicous meal! Taking advice from other reviewers, I roasted my squash, I used 1/2 a bag of frozen carrots (that is all I had) and cooked those with the onion. I also used chicken broth and 1/2 a package of Fat Free Cream cheese. It was delicious - very creamy (used the food processor before I put the cream cheese in). Yummy. My 2 1/2 year old ate some too.

I've tried 3 butternut soups this fall. This is the best one. I used fat free half and half in place of the regular cream (i'm a lifetime weight watcher member). I added some curry (just a sprinkle) and some cayenne to give it a zip. Fresh grated nutmeg adds a nice touch too. Great recipe.

This was very good. It was very sweet so next time I think it may be a side dish for something else. I'm going to add some sour cream to my leftovers to see if that will cut the sweetness a little. All in all very tasty.

I really hate all kinds of squash, but a butternut came in my CSA box, so I made this soup. I thought it was great! First time I've ever liked anything with squash in it! I did roast the squash first.

This is wonderful! I needed to use a butternut squash that someone gave me, I hated to let it go bad. When this recipe came up I decided to try it and wow was it great. I did not have any cream but I did take the suggestion of another reviewer and used a little whip cream. It looked great and it added just a hint of sweetness complimenting the bisque very well. Also, I added some hot pepper flakes to spice things up a bit. I definately will be buying myself a butternut squash once in awhile to make it again!

This was a really good recipie. We didn't know that butternut squash was so good! Also, my husband (who likes helping in the kitchen as long as it involves using knives and / or chopping) had no problems using a potato peeler on the squash. This was a quick, easy and delicious recipie.
