I steamed the squash cubes, used organic yogurt in place of cream, used canola oil in place of butter. My husband suggested putting in some crab, which I did. Verdict: doesn't necessarily add to the flavour. Definitely will make this again.

This was delicious! As the winter is starting to creep in, I am looking for something quick, warm and hearty for my family of three. I kept out the onions (husband with heartburn) and presented the meal as "cheddar cheese soup" to my 5-year old, he gave it one million thumbs up. (hee-hee) Served with crusty bread, everyone was satisfied. Thanks for the great recipe!

Good base recipe. Next time I think I'll roast the squash in halves rather than cubed - peeling and chopping was tricky. I didn't have cinnamon sticks so I sprinkled the squash with ground cinnamon before roasting. Also added about 1 tsp of fresh grated ginger to the leeks, onions and apples. Used 3.5%milk instead of cream. Didn't use the squash garnish, fine without it! Thanks!

Delicious! Pretty much followed the recipe exactly except I didn't have enough leeks, so I just used a little more onions. Came out great, I'll definitely be making it again.

This is delicious. Very much like the one I spend a lot of money for at Stew Leonards (specialty store in NY area). I used frozen squash, and it was still quite good. I didnt have leeks on hand, so used a little more onion.

This was good, but was a lot of work. I guess I was disappointed that for all the work I put in it wasn't better. Good end product, just a lot of work to get there.

Very good! Substituted canola oil for most the butter, and 2% for most of the whipping cream with no ill affects. Great fall flavor. The apple really comes out.

Very good butternut squash soup. Great creamy flavor. I must admit this soup took quite a while to prepart, but well worth it!!

Very good-I used half-and-half instead of cream to cut down on the fat, and added a little paprika to the sauteed squash. It came out delicious!
