Absolutely DELICIOUS. The second time I made them I added the zest of one orange and 1 cup of cranberries, chopped. With the addition, the muffin was a little 'doughy' while they were warm, I think from the extra moisture, but very, very good after they cooled. Thank you for sharing this wonderful recipe.

I think this recipe is almost identical to the one my mom made when I was growing up (Better Homes & Gardens Cookbook). These are just good, wholesome breakfast food. I used rolled oats (and added a few unsoaked ones to the batter for texture), substituted prune baby food for all but 1 tsp of the oil, and added vanilla and cinnamon. Will use half whole-wheat flour next time. Delicious!

These were good - I added a tsp of vanilla and added chocolate chips. I think they would have been a little plain without those - but they are quite good with them.

I followed the recommendations of other reviews and used two eggs, and cut the sugar to 1/4 cup because I'm diabetic, and they turned out great!

My kids wanted cinnamon muffins and I wanted something healthy. With some modifications this fit the bill. I doubled the recipe, used 1/2 whole wheat flour, and added 1T. cinnamon and 2t. nutmeg. We were out of buttermilk so I added a little Iemon juice to the milk to curdle it. I also tried a crumb topping but it proved too heavy and caved in the tops. With the modifications I would give it 5 stars.

A great HEARTY muffin! Not like a sweet cakey muffin, but wholesome tasting. I always add some vanilla & cinnamon to mine. Usually some chopped nuts and sometimes frozen blueberries or chopped apples, even bananas. It's a very forgiving, versatile base recipe to start with: then add in what flavors you like. Just remember to SPRAY the liners inside w/ cooking spray before adding in your batter, or they will stick! My 4 yr. old loves eating them, and I feel good serving them :-)

I made the mistake of doubling these which made 26 large muffins! I did add about two cups of blueberries, which might have made the batter stretch even more and a tsp. of vanilla. With any oatmeal-based recipe, I let the batter sit for about ten minutes or so to soak up some of the liquid. Smells great.

This is a very yummy muffin. I added 1/2 cup of walnuts. Like another reviewer mentioned, I'd love to know what else Mr Luebke's wife served along with these muffins. :)

I did as someone else suggested and added vanilla, cinnamon, flaxseed meal, and a grated apple. They were good, but a little bit bland. I will be making again, but with some changes. Thinking of adding some raisin bran crunch in the mix.

These muffins are very moist, and it's the buttermilk that makes them great. My daughter loves them and she's kind of picky. She likes that they don't have any "extras" like nuts , raisins, etc.

wonderful, light and perfectly sweet results. I added one tsp of vanilla and kept them pretty basic (they are for my daughter's preschool class). I used old-fashioned rolled oats and doubled the recipe. Baked them at 390 for 18 minutes. Excellent recipe. I will use this as a base for MANY recipes in the future.

recipe as is is great. However, I do double it, add 3 grated apples, four (small) grated carrots and a good Tablespoon of cinnamon. I also add some sunflower seeds and wheat germ and use half whole wheat flour and half all purpose flour. I obviously need to bake them longer and just keep my eye on them. Yummy this way too!
