The first two times I made this, it came out 5-star delicious. The third time I made it, I decided to make it the day before, as others suggested. Don't make it ahead unless you absolutely have to. It's not near as good. There were three things I didn't like when doing it this way. 1) Because you're starting with a cold pie, the cheese started to get too brown on top without it getting completely heated through the middle. 2) I did not like the texture of the tortillas as well. 3) The bottom tortillas stuck.

This was pretty good. I think that using Taco seasoning would make it much better. Also serve with shredded lettuce, tomatoes, and sour cream

This was very good. I added frozen corn and velveeta mexican cheese to the filing and used taco seasoning mix as others suggested.

I made this for dinner the other night and I was very pleased with the way it turned out. I added black and green olives to the layers and I also mixed a can of black beans with my refried beans. Like other's, I didn't mix my beans in the meat, I just layered it. My dish remined me of a Mexican Lasagna. Anyhow, it turned out awesome and I will make again. I served it with Mexican yellow rice and (Mexican corn) which is also a recipe on this site. Yummy meal, thanks for sharing.

Very good! Everyone loved it! The measurements are enough to make 2 casseroles, and I froze one to make later. You simply thaw and bake at 375 for 30 minutes.

I have made this a couple of times and have been disappointed in the results. The texture once baked is very slimy in the middle. It tastes like a glorified bean burrito from Taco Bell. The ground beef is just lost in all the goop. Not my cup of tea and my family defintely did not care for it.

Wow fantastic!! Reduced the recipe to 4 servings... it made just enough for a dinner for two and one night of left overs! Followed the recipe exactly, except added black beans. YUM YUM!!

I made this serveral times. I bake this pie in a springform pan to help it hold better. It's best to use two tortillas to prevent the pie from getting soggy. Also, I use mexican four cheese blend. This is a great meal with sour cream and a side of spanish rice.

Cut the recipe in half, did not have Rotel tomatoes, so used 1/2 can of petite diced; had no chilies, so diced some jarred jalapenoes; did not have 8" tortillas but had 5 burrito sized, so tore them into bite-sized pieces; added taco seasoning packet as suggested by others. Made two layers, plus the bottom cover out of the sauce, which was a bit scarce at the end. DH enjoyed it. I put plain yogurt over my serving, as sour cream sounded like a good addition and that was all I had. Easy and pretty tasty. Thanks for sharing.
