I made this tonight for my family's dinner & it was a hit! I made a few modifications based on what I had on hand and it turned out great! Used taco seasoning on the beef, left out onion, olives & canned tomato only because I didn't have any. I did add a can of diced green chili's for a kick & after making the layers I poured red enchilada sauce over the top. I also used corn tortillas instead of flour because of my food allergies, it's a hit with us, I'll be making this again for sure! Thank you!!

WOW!!! Amazing!!!! I halved this recipe for my family cause I definitely didn't need the 16 servings worth! I used a 2 1/2 qt baking dish, 2 tortillas thick for each layer,omitted the olives by personal preference and holy moly was it good!!! My family loved it!!!! This will definitely go in the rotation! My husband added a little bit of hot sauce and sour cream, and devoured 2 huge helpings! Also 10 stars on easy-ness!!!

My family raved about this!! I did change it up a bit, though. I omitted the olives, added black beans, reduced the meat to 1 1/2 lbs., and added taco seasoning. I also used both taco sauce and salsa to give a good kick to it. I can't wait to make this again!

This recipe is so good and easy to make. I leave out the olives as my husband really doesn't like them and it's still just as good. I try to buy thick flour tortillas so it isn't soggy. Makes great leftovers!

This recipe is great! I made a few changes. I don't like beef so I used 1 lb of chicken instead. I also skipped the olives. I used black beans instead of refried and fresh versus the canned tomatoes. It was so good! It was a little soupy so next time I'll simmer a little more and also make the tortillas 2-3 layers thick as others suggested! Definitely a big winner!

Substituted vegetarian chorizo for the ground beef and roasted pepper salsa for the tomatoes and taco sauce. Tastier than expected! Will make this again for a filling, delicious, quick & easy meal.

This was very good. Next time I would like to use 2 tortillas for every layer. I used "Refried Beans Without the Refry" for the beans and "Taco Bell Taco Sauce" from Recipezaar for the taco sauce.

I tripled the tortillas and also layered the beans and meat separately. I wanted it more like a lasagna and less like a casserole. I also added extra spice and peppers to the meat mixture, as i LOVE things spicy. This recipe was so easy and really delicious. No matter what you put in here, you cant go wrong!

my boyfriend hates beef and tomatoes so I used ground turkey with taco seasoning and told him there were no tomatoes (but there really was) and he loved it. I will be making this often.

This recipe is a KEEPER!! I added a can of rinsed black beans, and a can of mexi-corn. I also used salsa instead of taco sauce, and saved the black olives to top the sour cream before serving. It was DELICIOUS!! I even used multi-grain tortillas to make it even more healthy. Then I freeze the leftovers in individual containers for lunches!!

This was very good! I crisped the tortilla's before layering and used red enchilada sauce instead of the taco sauce and tomatoes because that is what I had on hand. Next time I will follow the recipe too a "T" as I'm sure it will be even better. Thank you for the great recipe.

This was really good. I put 4 tortillas in each layer and made it in a 9x13 dish. I didn't put the beans in with the meat mixture but instead just spread them on top of the tortillas, then layered the meat and cheese. I also added one packet of taco seasoning (without water) to the meat mixture. Will be making again..thanks for sharing!

This was just wonderful! I double layered the tortillas so that they didn't get soggy. I also added taco seasoning and salsa (since I didn't have some of the ingredients) Top it off with sour cream and this is a great meal! I will certainly make this one again!!!
