You do not need to be lazy to appreciate the simplicity of this quickly prepared meal. Browned ground beef is layered with tortilla chips, shredded lettuce, tomatoes, cheese, onions, and taco sauce. 

Corn Chip Salad

All the standard taco salad fixings (ground beef, lettuce, tomatoes and onion) are chopped and tossed together with two kinds of cheese, purple kidney beans, Thousand Island dressing and a generous helping of corn chips to create a kaleidoscopic party-pleaser.

The French dressing is cooked up with the ground beef, beans, and taco seasoning. Then it 's poured over the other salad fixings - lettuce, tomatoes, Cheddar cheese and tortilla chips.

Envision a thick taco brimming with chopped tomatoes, ground beef, lettuce, and lots of shredded cheese. You'll have a pretty good idea of what this nifty salad will be like. Except this one you top with a Catalina dressing. Refrigerate overnight and enjoy.

A wonderful picnic, potluck or 3-day dinner. Quick and easy and everyone seems to love it. Optional toppings include chopped tomatoes and olives. I love to have this heated a bit the next day or two!!! 

Mom's Hot Mexican Salad

Just like eating a beef taco without the tortilla. It 's got lots of cumin and green chilies mixed into the ground beef and other goodies. And it 's served hot so the cheese is all melted and wonderful.
