This was absolutley amazing! I'd always been scared to try Jumbalaya, I thought too many ingredients, too many steps, and too long to make. I was wrong!! I did everything to a tee and it came out great. The only thing I did different was use Smoked Turkey Sausage, and instant brown rice instead (I'm horrible at rice!!) Everything came out so good, I simmered it for about 2 hours, but honestly the flavors were so good it'd be good at 20 minutes as the recipe said (if you are short on time)
Also, I had to keep some extra stock / tomato sauce ready because that instant rice just sucked up all the liquid. No biggie, just a word of warning if someone else wants to use brown rice.
