I just made this for my lunch tomorrow and it is delicious. I followed the recipe exactly except that I added thin carrot sticks and a stalk of celery for a little more color and flavor. I did find the dressing a bit sour and will cut the red wine vinegar down by at least half. I also followed one review and cooked 1/2 cup lentils and 1/s cup brown rice with 2 cups chicken broth in the rice cooker. It turned out well. Five stars for this one because the possibilities are endless!

This was a quick and easy recipe that surprised me. I had a leftover can of lentils and a ton of brown rice and figured I'd give it a shot. I used spicy mustard instead (that's all I had) and it came out awesome. Thanks for this healthy and refreshing recipe!

Just okay. I followed the recipe exactly and the red wine vinegar seemed way too overwhelming a flavor for my tastes. I would suggest reducing it by half, adding more olive oil, and adjusting flavors from there.

This salad is excellent. Very tasty and good for you! Highly recommend for a lunch or a lite dinner. Didn't have any red wine vinegar, so used Balsamic instead. Also added some diced red pepper and some shredded carrots. Awesome, thanks!

This was a very tasty salad, but I found it a little too salty for my taste. I will probably make it again, but will use more like 3/8 tsp. of salt. The only change I made was to use chopped fresh chives instead of the green onion, because I didn't have any. Thanks for an easy and tasty recipe!

We thought this tasted okay, but not 5 star like I was hoping. There's no question that it's a salad you can feel good about eating. To make things easier, I put 1/2 cup each, uncooked rice and lentils in the rice cooker with 2 cups of water and the bouillon. They came out perfectly done, and the rest was easy to throw together.

This was really good and reminds me of a tabouleh recipe I make in summer! I used couscous today since I didn't have brown rice on hand and it was very good! I would recommend making twice the sauce next time but overall, quick, easy and very pretty on the plate!

I made a small amount to start with because I was testing it before making for two separate Christmas parties. Both my husband and I liked it but both thought it was a bit heavy on the vinegar so I'll cut that back when I make it next time. Overall, though, this is a very good recipe.

Really good, I didnt have green onions, and it was a bit too tangy because of the vinegar, I am just gonna decrease the amount of vinegar a tad.

I used chicken broth since I didn't have bullion. Great recipe! I'm not a huge fan of lentils, so first bite I wasn't sure if I liked this. But it's so good for you, it was like my body craved it! This will become a frequent addition to our meals.

This was delicious! My husband said "I have to say I was dubious about this lentil stuff, but it's fantastic!". Like another viewer said, it's isn't pretty looking, but it tastes great, and that's the most important part. (Also, I had to use canned diced tomatoes, dried parsley, and red onion because I made it last minute and it was still awesome. I know it will be even better with the fresh ingredients).

I took this to a BBQ and it was well enjoyed by all, and I just loved it! The dressing is delicious, I substituted the wine vinegar for apple cider vinegar and it still came out great. I also added in some diced yellow peppers, substitued chives for the green onion, and added A LOT more parsley. It was absolutely delicious, I'll be making this one again! Edited to add that I made this for yet another BBQ and it was super tasty once again, delish. This is pretty much a staple for me now for BBQs.
