INGREDIENTS
1/2 cup uncooked brown rice
1 cup water
1 teaspoon chicken bouillon granules
1 cup cooked lentils
1 medium tomato, seeded and diced
1/3 cup thinly sliced green onion
1 tablespoon minced fresh parsley
2 tablespoons red wine vinegar
1 tablespoon olive oil
2 garlic cloves, minced
2 teaspoons lime juice
2 teaspoons Dijon mustard
1/2 teaspoon salt
1/4 teaspoon pepper

DIRECTIONS
In a saucepan over medium heat, bring the rice, water and bouillon to a boil. Reduce heat; cover and simmer for 40 minutes or until rice is tender. Cool.
In a bowl, combine the rice, lentils, tomato, onions and parsley. In a small bowl, combine the remaining ingredients. Pour over rice mixture; toss to coat. Cover and refrigerate for at least 1 hour.

Nutritional Analysis: 1/2 cup equals 111 calories, 3 g fat (trace saturated fat), trace cholesterol, 369 mg sodium, 18 g carbohydrate, 4 g fiber, 4 g protein. Diabetic Exchanges: 1 starch, 1/2 lean meat.

DeeAnn, thank you for a fabulous recipe. The dressing is OUT OF THIS WORLD and I will be making it for green or potatoe salads, too! I didn't have lentils so I doubled the rice. I opened up my crisper and found celery, bell pepper, carrots and apples...I diced it all up & threw it in. Nice crunch and pretty colors. Something sweet like apples or raisins works with the nutty rice and the tangy-garlicky dressing. I would add some chuncks of chicken if I was making it for my husband. I am sure the recipe is fabulous as is, but it is also very adaptable. Don't be afraid to try it with what you have on Since its not a mayo-based dressing it would travel well, too.

I cooked 1/2 cup brown rice, 3/4 cup dry lentils, chicken bouillon granules, 1 bay leaf in 2 1/4 cups water for 40 minutes. When it was cool, I added it to the rest of the ingredients in the recipe (substituting cilantro for the parsley). I loved it! We all loved it, including my 3-year-old and that's saying a lot!

I took this to a BBQ and it was well enjoyed by all, and I just loved it! The dressing is delicious, I substituted the wine vinegar for apple cider vinegar and it still came out great. I also added in some diced yellow peppers, substitued chives for the green onion, and added A LOT more parsley. It was absolutely delicious, I'll be making this one again!

Wonderful recipe! I cooked my lentils in broth and added a little garlic and bay leaf. I didn't have bouillon granules so I threw in a cube. I purchased a lime, but I think I could have used a lemon, which I usually have on hand. The lime was a very nice for a change though. The previous reviewer was correct - this recipe is very adaptable. I'll make it often!

This was delicious! My husband said "I have to say I was dubious about this lentil stuff, but it's fantastic!". Like another viewer said, it's isn't pretty looking, but it tastes great, and that's the most important part. (Also, I had to use canned diced tomatoes, dried parsley, and red onion because I made it last minute and it was still awesome. I know it will be even better with the fresh ingredients).

Really tasty. I used halved grape tomatoes, but that was the only change. Great dressing. The only drawback is that the dish made me quite gassy.
