"This bread is steamed in cans. My Gram saved small coffee cans for this. Gram didn't have a steamer so she used a tin pie plate with holes in it turned upside down in a large covered pot with 4 inches of water."

Ingredients

  • 1 cup bread flour
  • 1 cup whole wheat flour
  • 1 cup cornmeal
  • 1 cup molasses
  • 2 cups water
  • 1 teaspoon baking soda
  • 1 teaspoon salt

Directions

  1. In large bowl, stir together bread flour, whole wheat flour, cornmeal, baking soda. Stir in molasses and water; mix until combined. Pour batter into two lightly greased coffee cans, fill about 2/3 full.
  2. Place loaves into a steamer, cover and steam over low heat. Steam for 1 hour and 45 minutes, until loaves are set.
