Excellent - a KEEPER! I tweaked a bit as suggested by others (more sauce, cut chicken before frying). Next time will try adding an add'l small can of diced tomato (this time I added about a cup of leftover jar sauce, and made a little less penne. Still slightly too hot for me, but my husband loved it). I used 2 large eggs and had leftover egg, probably 2 medium eggs would work. Used 1/2 cup less breadcrumbs, still had leftover.
