Ingredients

  • 4 pounds skinless, boneless chicken breast halves
  • 1/2 cup mayonnaise
  • 1 tablespoon soy sauce
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon cayenne pepper

Directions

  1. Flatten the chicken to 1/4-in. thickness. Place on a broiler pan rack. Broil for 3 minutes on each side. Combine mayonnaise, soy sauce, ginger and cayenne; brush over chicken. Broil 2-3 minutes longer on each side or until juices run clear.
