Broccoli with Red Pepper

INGREDIENTS

  • 2 tablespoons vegetable oil
  • 4 cups broccoli florets
  • 2 teaspoons minced fresh gingerroot
  • 2 garlic cloves, minced
  • 1 sweet red pepper, cut into strips
  • 1 (8 ounce) can sliced water chestnuts, drained

DIRECTIONS

  1. In a skillet, heat oil over high, Stir-fry broccoli, ginger and garlic until broccoli is crisp-tender, about 2 minutes. Add red pepper and water chestnuts; stir-fry just until heated through, about 1 minute. Serve immediately.

Diabetic Exchanges: One serving equals 2 vegetable, 1-1/2 fat; also, 117 calories, 28 mg sodium, 0 mg cholesterol, 17 gm carbohydrates, 3 gm protein, 7 gm fat.

Bland, bland, bland. Didn't care for this at all. I gave it two stars because it is healthy and colorful. I doubled the recipe to 8 and served it for a Thanksgiving side to 15 people and more than HALF was left. I tasted it as I was preparing it and tried to jazz it up with all kinds of seasoning to no avail. Won't make again.

Simple, good recipe to jazz up basic broccoli. Looks and tastes beautiful.
