Broccoli and Garlic Penne Pasta

INGREDIENTS

  • 1 cup Swanson® Chicken Broth
  • 1/2 teaspoon dried basil leaves, crushed
  • 1/8 teaspoon ground black pepper
  • 2 cloves garlic, minced
  • 3 cups broccoli flowerets
  • 4 1/2 cups hot cooked penne pasta (medium tube-shaped pasta), cooked without salt
  • 1 tablespoon lemon juice
  • 2 tablespoons grated Parmesan cheese

DIRECTIONS

  1. Mix broth, basil, pepper, garlic and broccoli in skillet. Heat to a boil. Cover and cook over low heat for 3 minutes or until broccoli is tender-crisp.
  2. Add pasta and lemon juice. Toss to coat. Serve with cheese.

This was simple and delicious! Very low fat, and the kids loved it:-) I added cut up chicken breast, and about a TBL of cornstarch and water just to thicken the broth a tad...made it stick to the noodles a bit:-) Thanks!

Surprising light and tasty, and quite easy to make. I did tweak the recipe a bit: - doubled the broth, - substituted 1 1/2 Tbsp fresh basil for the dried stuff - added extra garlic - added 1 chicken breast, cubed (for 2 people) - added 1 1/2 Tbsp each cornflour and water to thicken it I cooked the chicken in the broth for about 5-7 minutes before adding the broccoli. Don't be tempted to skip the lemon juice on the cooked pasta - it really adds a bit of zip to the whole dish.

This was an okay recipe. There was not that much sauce and I ended up doubling the broth and then adding a cup of sour cream to thicken it up. I also added a ton of cheese and some hot sauce to jazz up the flavor, but parts of the pasta were still dry. Overall a good lite meal, but not the most memorable.
