My daughter made this for Christmas dinner and it was good. I wanted to try turning it into a one-dish dinner. I doubled it and used a bag each of frozen broccoli and squash (use any veggies you like), Stove-Top stuffing, and canned chicken (use leftover chicken or turkey). I cheat a lot in the kitchen with shortcuts... I turned on the oven to pre-heat then got out a large deep skillet. In the skillet I dumped one can each cream of chicken and cream of mushroom soups, plus 1/2 can of water. I added about a teaspoon of chicken bouillon and 2 large cans of chicken (only one drained). I let this mixture get hot, stirred in some dried minced onion, then added the veggies. I let this simmer until the veggies were almost done. While waiting I opened 2 boxes of stuffing mix and reserved 2 cups of it. I melted 1/2 cup of butter and tossed it with the reserved stuffing and set it aside. I sprayed a 9x13" baking pan with cooking spray. Then I turned off the heat under the skillet, dumped in the rest of the stuffing mix and a handful of shredded cheese, stirred it quickly, and poured it into the baking pan. I sprinkled more cheese on top thinly, then added the 2 cups of butter-tossed stuffing mix and popped it into the oven. I didn't time it exactly, but in the time it took to wash the pan and measuring cups and clean up the kitchen (20 minutes? 15?) the top was browning and crunchy. Done! Yay! Now I have a new easy one-dish meal. Hubby says thumbs up!
