Creamy, crunchy, feel good side dish. Perfect as a side dish on Thanksgiving. Goes great with chicken and pork chops. Sometimes on a rainy day I'll just eat a great big bowl of it. You can save on calories by using water instead of milk and going a bit easy on the French fried onions.

With sausage, mushrooms, celery and the perfect blend of seasonings, this moist dressing is irresistible. I like to call it 'Unstuffing' since it bakes separately from the turkey, which I do on the grill. -Ken Churches, San Andreas, California

Considering how fast our five children and 16 grandkids finish off these cheesy carrots at Sunday suppers, the 'Zippy' in the title is appropriate! I came from a clan of avid cookers. At age 85, my mom's worked her way through every one of our recipe books from cover to cover!

Our 1-year-old son can be a fussy eater, and my husband is mostly a 'meat and taters' man. But both my guys love this cheesy squash bake! Often, I make a double batch of it and take one to the 4-H nutrition class I teach. It's a 'hit' there, too. If you're a pressed-for-time cook like I am, this squash casserole will streamline your menu planning.
