6 cups uncooked wide noodles
3 cloves garlic, minced
1/4 cup olive oil
4 cups broccoli florets
1/2 pound fresh mushrooms, thinly sliced
1/2 teaspoon dried thyme
1/4 teaspoon pepper
1 teaspoon salt

DIRECTIONS
Cook noodles according to package directions. Meanwhile, in skillet, saute minced garlic in oil until tender. Add broccoli; saute for 4 minutes or until crisp-tender. Add the mushrooms, thyme, pepper and salt; saute for 2-3 minutes. Drain the noodles and add to the broccoli mixture. Stir gently over low heat until heated through.

Diabetic Exchanges: One serving (prepared without salt) equals 1-1/2 fat, 1 starch, 1 vegetable; also, 167 calories, 12 mg sodium, 23 mg cholesterol, 20 gm carbohydrate, 5 gm protein, 8 gm fat.

This is a great side dish. My family really enjoyed it. Of course I made a few small changes like adding soy sauce, garlic and such it add more flavor. I will be fixing this on a regular basis! Thanks!

My family loved this dish! I followed other suggestions and added crushed red peppers and topped with parmesan cheese. It took longer to cook than I expected (I'll chop the broccoli smaller next time), but it was worth the wait!

This is not the dish to use if you are looking for something with a lot of flavor. I made it as a side dish with curry chicken which is very flavorful. The two went together nicely. Not sure if I will use this again.

This would be really good with pieces of chicken. I took the advice of the parm cheese and it's really optional and good either way. I will definitely make this in my rotation of sides.

I thought this might be a nice side to the the lemon pepper chicken I made.. well... I had to add cracked red pepper, parmesan and all kinds of other stuff to this recipe to like it...good base but needs way more flavor

4.5 stars! Very tasty and easy to make. I did what others suggested and sprinkled with parm cheese. I also added a little crushed red pepper for a little extra kick. Will be putting this in my regular rotation. Thanks for the recipe!
