So good, really easy to make. I missed the defrost part when I read the recipe this morning. I put the broccoli in the microwave for 2mins and drained it. Worked perfect, I think next time I will add a 1/2c of corn too. These are Awesome and really moist. Thanks Dona!

Absolutely awesome! Great taste!! I added a splash of pepper and a pinch of salt, but that was the only modification I made to this recipe. I'm not sure why others state that this recipe is bland or dry because mine were perfectly moist and flavorful - glad I didn't listen to anyone and stuck to the recipe ;P

These were very good. They were a tad sweet, but that may have been the substitution I had to make. I had no cornbread mix, so I used a substitute I found online. It consisted of Bisquick (which I don't buy, but had homemade baking mix onhand), corn meal, and sugar. I also used fresh broccoli which I steamed for 5 minutes and then cooled. I may have had a bit more broccoli than I needed, too. I will make this again. It's a great way to get a serving of veggies, too!

(One 8.5oz package of corn muffin mix is a smidgen more than 1.5 cups, in case you're buying a larger package.) Surprisingly great! I didn't have the quantities exactly as specified but it worked out fine. Nice mix of broccoli, cheese and onion- no flavor stood out, it just blended together well. I used Tom's Red Mill corn bread mix, btw, and guessed at what 8 oz would be. This could easily be made gluten free. I'll make these again. Oh, it made 12 muffins, not 18. I filled the muffin tins full, it didn't rise too much. Thanks for posting this!

Wow, this was one my whole family enjoyed!! I used fresh broccoli because I had some. Instead of onion used 1tsp onion powder (personal taste). We baked as mini muffins, easy to eat, great for the little ones, and good for you too.

Fabulous! I substituted 1/2 a red onion for additional color and I combined all the ingredients except the corn bread mix, then stirred in dry mix just until blended. Moist, tasty and pretty! I ate too many . . .
