Fabulous! I substituted 1/2 a red onion for additional color and I combined all the ingredients except the corn bread mix, then stirred in dry mix just until blended. Moist, tasty and pretty! I ate too many . . .

This was a great variation on cornbread. The only problem I had was with the batter being dry, but a splash of milk fixed that.

I didn't change a thing and it came out smashing. Everyone loved it. I finally have a great way to make corn muffins interesting with little effort! Thanks.
