This is My Favorite!!! Easy to double and freezes well too...I use Half and Half instead of milk and add a handful or two of shredded cheddar to it and double the amount of broccoli. So creamy and flavorful!

This was fantastic! I, like others, doubled the cheese and broccoli and used 1/2 & 1/2 in place of milk. I mixed the cornstarch with the last can of chicken broth instead of using water. I honestly think you could get away w/ 1/4 cup of cornstarch though and I plan on doing so next time. As much as I LOVE the taste w/ all that velveeta, I might try 1/2 velveeta 1/2 cheddar next time. After it finished cooking, I took my handy stick/wand blender thingy and pureed it until almost smooth. This reheated beautifully the next day and it reminds me very much of 99 Restaurant's broccoli & cheese soup. I have 6 children, and over half of them liked this so I call that a win!

I thickened soup with potatoe flakes next time I going to add some shredded cheese and might try a beer as well

I use the recipe as an idea of what to do. I put my own style using:1cup of heavy cream, 1 1/2 cup of milk, also instead of chicken broth I cook first the broccoli and use the same water giving it a best flavor. Thanks

I've made broccoli cheese soup many times, but not always with great results. I love this recipe. I added some white wine to the onions while they were cooking as the author suggests. I took out some of the broccoli and put it in the blender and then put it back to the pot. Also, I used 1/2 cheese food (cut into small pieces) and then the other 1/2 medium cheddar and sharp cheddar shredded. I added the cheese food to the broth/broccoli mix and once it was melted, I added the milk and when the milk was hot enough, I added the shredded cheeses. The end result was a creamy, cheesy base.

This soup is very good! I didn't have any garlic powder so I substituted 1 Tbsp. of finely minced fresh garlic and put it in with the onions.

Wow! Yum! I halved the recipe since it was only for 2 people. I had my 9 yo daughter doing a happy dance as she was eating it! I doubled the broccoli and cheese like others suggested, added half a cup of white wine, and 2 cloves of garlic. I also used half and half instead of milk, and a dash of cayenne at the end to give it a little kick. I used the food processor to blend it up because I wanted it smoother. A definite winner!

This was Awesome! I did not use all the butter, and I just made a roux with 3 Tbs. of flour , I didn't have frozen broccoli, so I used fresh. And used homemade chicken broth instead of canned. Yum!
