I thought this recipe was awesome! I did add 1 and a 1/2 bags of the broccoli florets and I did double the cheese. I also added about 1/4 cup shredded carrots. I thought this soup tasted just like panera bread's soup. I think the texture is fine and is how soup is supposed to be, not too thick.

Wow. Oh Wow. I've been looking for a broccoli cheese soup recipe for a long time and have always been intimidated by them - until now. I made this recipe using the double idea (double cheese, double broccoli) and even though the cheese was almost too much (I'll be doing 1 1/2 lbs of cheese next time), it was amazing. The cornstarch mixture made it thicken beautifully - perfect for a cold winter day. Makes a lot, but that's no big deal - we'll get a day or two of lunches out of it!

This is an amazing recipe! I've had it exactly as written and also tonight I made some alterations. Everybody's taste is different lol. Still yet I did not vary to far from the original. Like many others I doubled the cheese, and added garlic in with my onion. I used 2-32oz boxes of broth instead of 4 cans, and 4-16oz bags of frozen broccoli. We love broccoli lol. I do not have an immersion blender *wish I did* so once all was mixed and heated I blended half of the soup. DELISH!!!!!!! I love it

This was so good! Since I was cooking for two, I halved the recipe except for the cheese and the broccoli. I used a 10oz. chopped broccoli square and a half of a 16 oz. bag of broccoli cuts. Followed another reviewer's advice and reserved some chicken broth to mix with the cornstarch instead of water. Hubby even had seconds. Froze leftovers. Served with some sweet cornbread, this rivals Quizno's.

The only thing I added to this recipe was diced fresh tomatoes, diced red onion and some shredded cheese on top when I served it. It is even better on the second day. YUMMY!!!

Took the advice of others and decreased the butter to 6 tablespoons, added 3 minced garlic cloves to the onion mixture, used 2lbs fresh broccoli (chopped in my cusinart), used half and half instead of milk, and doubled the velveeta...it was good but WAY, WAY, WAY to rich. Next time I'll do everything I did except doubling the cheese....it's way too much cheese!

I wish I had followed the directions... I doubled the cheese as many suggested, and it was really salty and had a strong processed cheese flavor. I'm glad I doubled the broccoli, but next time I will use only 1lb. of the cheese.

Yummy! Everyone loved this soup. My husband is a meat and potatoes kind of guy so he was a little bummed that I was making this rather than a stew. That all changed with the first bite! I used fat free half and half and added some cheddar and jack blend with the processed cheese. I also used fresh garlic rather than the powder. Thank you! Planning on making this for our family on Christmas Eve!!!

This was incredibly good and easy to make. Used suggestions from other reviews, doubled broccoli and cheese. Omitted water and added corn starch to the 4th can of broth. Thickened up nicely, tastes great!!

I honestly felt that this is way too rich to be a soup. The amount of processed cheese and butter makes this soup very heavy. My boyfriend said the flavors were great, but he ended up eating it as a dip with chips!

Absolutely fabulous! I wish I had some containers so I could save some of this goodness for the cold winter that is upon us. I only added 3 cans of broth. I mixed the corn starch with the 4th can. I used my emulsion blender on this as well. My husband thinks I'm the best cook in the world- thanks for a great recipe!

Great recipe!! Easy to follow, and delicious!! The only thing I did different was used fresh broccoli because there was so much at my local farmers market. I also uses a tsp of minced garlic because I didnt have garlic powder at the time! It was so good!! Thanks for sharing the recipe!
