I agree with Megan, this soup tastes just like Chili's recipe. I was just at Chili's about a week ago and found out that they no longer offer broccoli cheddar (at least at the buffalo location), so I am very glad to have found this recipe. The only other place I have found a comparable broccoli cheddar soup is Panera Bread, but now that I can make it at home, that is what I will do. I made the recipe as directed, and agree with adding more broccoli, but besides that it is perfect.

Soooooooo good. I used fresh broccoli and a hand blender to process half the ingredients after the broccoli was cooked. Used half the processed cheese food and half cheddar cause that is what I had. Left out the water added the corn starch to a cup of the broth. Added the cheese when soup was done and stirred until it was all melted. I will definitely make this one again. This one is a keeper forr sure.

How can you go wrong when a recipe starts with cooking onions in butter! You immediately know it's going to be good.... :) This is the best by far Broccoli Cheese Soup around. I always loved Panera's but this might be at least one star higher than Paneras... Delicious! I added about twice as much Broccoli, and added some diced carrots... Wow, it's sooooo good! I found this recipe at work last night (worked midnight shift) couldn't wait to fix it for my breakfast........ Yum-O

Excellent!!! Only substitution was halved the Velveeta cheese and used sharp cheddar in its place. Wascreamy but not too rich.

i only used 2 cans of chicken borth and it was a tad thick. Three cans would have been perfect. This was a huge hit and very easy.

Very good soup! Like some other reviewers, I doubled the broccoli, to make this more nutrition dense. I didn't double the cheese, and it was still plenty cheesy. I used my immersion blender to puree the soup before adding the cornstarch. Thanks!

Very good! However, I've have made alterations. Double the broccoli (32 oz). 2 cups of evaporated milk, instead of regular milk. No garlic powder. 2 tbsp flour instead of 2/3 cup corn startch, I thought the corn starch added a chalky texture. Prior to adding the cheese I removed half the mixture and blended it, this gave it a great creamy base.

Excellent recipe! I made only a couple of changes and let me tell you, it went FAST! I omitted the onion and sauteed fresh broccoli in the butter (didn't use frozen). I also doubled the cheese (used a 32oz. loaf). Then I made a triple batch and it fed 21 people total (just my family and the teen friends) with only 5 servings left over (which frreze BEAUTIFULLY btw!). We paired the soup with sandwiches for some, garlic bread for others, and just crackers for the rest of the group. This recipe satisfied people 6yrs to 53yrs old! I have a large family (many kids) and easy and satisfying meals such as this are such a blessing! Thank you so much for sharing... I see this one in my family for many years to come!

I planned to make this soup days ago and when I finally did, I found that I didn't have all the ingredients so here is what I did. I didnt have a whole onion so I used what little I had and added a leek (white part only), I only had 1/2 a pound of brick cheese so I sliced the whole recipe in half and used broth cubes instead of broth. Fresh broccoli instead of frozen. The soup is fantastic. I will definately make it again.

My brother asked me for an easy broccoli cheese soup recipe that he could surprise his new wife with. I didn't have one but looked and found this one...which was a major hit! His wife was not only surprised at the fact that my brother had made soup from scratch, but was blown away at how good it was. My brother said this was incredibly easy to make even for a novice cook like himself.

This soup turned out better than expected! I was a bit nervous about it tasting like milk and cheese, but was pleasantly surprised. I did blend it together with a hand mixer at the end so there were no broccoli chunks. It made a nice creamy soup. I will try "real" cheese next time though, just for the health factor.

2-3 cans chicken broth only. Also I did 3 C. milk. Shredded cheese, not processed. Fresh broccoli, not frozen (steamed first) then it was really good. I recommend these changes. Perhaps a little less garlic.

very good. i food processed 3/4 of the broc first ... was a little watery - had to add extra corn starch to thicken it up

Very good soup, I used fresh broccoli and it came it just as good. I didn't have cornstarch so I used a flour/milk mixture to thicken the soup. Will definitely make again, but will cut back a little on the velvetta.
