Broccoli Cheese Layer Bake

"This is a recipe we have enjoyed in my family for several years. It has become a holiday staple and is very easy to make. In fact, it tastes better the next day or just cold out of the refrigerator."

INGREDIENTS

  • 2 (16 ounce) packages frozen chopped broccoli
  • 2 (11 ounce) cans condensed cream of Cheddar cheese soup
  • 2 (10.75 ounce) cans condensed cream of chicken soup
  • 2 cups seasoned croutons

DIRECTIONS

  1. Preheat oven to 350 degrees F (175 degrees C). Cook broccoli in boiling salted water until tender.
  2. Mix cheese and chicken soups in a large bowl. Add 2 cups of croutons; blend together well. Drain broccoli.
  3. In a 15x10x2 inch baking pan, place half the cooked broccoli in a layer. Spoon half the soup mixture over the broccoli. Finish with a second layer of broccoli and top vegetable with remaining soup mix. Cover with aluminum foil.
  4. Bake for 30 minutes or until bubbling.

Wow! Who would think something so quick and easy to put together would taste so good!! Had my daughter and son-in-law for dinner and served an entree that took hours to make and all they did was rave about this broccoli casserole! My daughter, who doesn't cook much, asked for the recipe. This is definately a keeper for regular meals as well as Holiday dinners. Thanks, Lynnmarie!!

This always disappears like mad! However, we have made a minor change to the recipie. Instead of cheese soup, we add cream of broccoli cheese! Very delicious.

My Family did not like this recipe, nor did I. It was overkill on the cheese sauce and it tasted like it had too many preservatives in it, even though I used Fresh Broccoli instead of Frozen. I will make my own version, using my cheese sauce recipe, (from my Mac and Cheese Recipe) and fresh Broccoli. A Sprinkle of Parmesan on top will make it perfect. I will submit the recipe as soon as I get it set up.
