This was almost like a spoonbread, it was so moist. This complimented Chili Casserole well plus it got one of those blasted packages of frozen broccoli out of my freezer to make room for that all important ice cream. ;) I did use a mixture of monterey jack and sharp cheddar. Great recipe when you're trying to clean out your cupboards!

Delicious! I usually serve corn bread to compliment breakfast, but the cheese, onions, and broccoli make this a treat for lunch or supper time. I did as the other reviewer suggested and made these in a muffin tin. Instead of the cheddar I used Tex Mex Nacho 3 Cheese blend. Very nice! Thanks for this recipe!

I made these for my daughter, so I left out the onions and chopped the broccoli very fine. I baked them in mini muffin pans and froze most of them - they are just as delicious after reheating.
