The flavors really blend well in this casserole. The crunch of the cornflakes adds to the texture contrast.

'I had a hard time getting my three sons to eat vegetables when they were young.' recalls Lucille Wermes of Camp, Arkansas. 'So I fooled them with this casserole that looks just like stuffing when it comes out of the oven. Now that they're grown, they sill ask for 'broccoli stuffing' when they come for dinner.'

This is my favorite dish to bring to church dinners, and whenever we have a carry-in at work, I'm asked to make it. I discovered the recipe several years ago. The rich creamy taste keeps it on my list of favorites. My husband even loves it cold! -Barbara Williams, Shady Dale, Georgia

Our 1-year-old son can be a fussy eater, and my husband is mostly a 'meat and taters' man. But both my guys love this cheesy squash bake! Often, I make a double batch of it and take one to the 4-H nutrition class I teach. It's a 'hit' there, too. If you're a pressed-for-time cook like I am, this squash casserole will streamline your menu planning.

My grandmother made this when she cooked for our farmhands years ago. I've cut her recipe down to serve fewer people. I like to make this side dish when my garden is bursting with fresh vegetables and into the fall, when the colors and taste blend into the season. -Mildred Sherrer, Bay City , Texas

MY HUSBAND and I grew up on plain hearty foods, and we both learned early on that simple food, well prepared, maintains good health. I always felt I was giving my family the best when I prepared this dish. They loved the nutty flavor and chewy texture of the barley, and it was a delicious departure from rice as a side dish. --Elaine Kremenak Grants Pass, Oregon
