This fresh salad pairs cooked roast beef with steamed broccoli florets. cherry tomatoes, and green onions with a zesty mustard-horseradish-sour cream dressing. You can use roast beef from the deli or any kind of leftover steak for the beef. 

Vietnamese Beef Noodle Soup

This is a simplified version of a Vietnamese beef noodle soup. Hot broth is poured over paper-thin slices of top round, cooking the meat, and the soup is then garnished with basil, cilantro, bean sprouts, and wedges of lime.

Corned Beef and Cabbage
