  1. In a large nonstick skillet, heat oil on high. Add Simply Potatoes®, ham and onions. Cook for 10 minutes, stirring occasionally. In a small bowl, beat eggs, milk, salt and pepper. Add mixture to skillet. Lower heat to medium; continue cooking until eggs are fully cooked. Remove from heat and stir in cheese.

I didn't have ham and I used butter instead of oil for the potatoes. I wasn't sure if I was supposed to keep stirring once I'd added the eggs or let it set. I ended up letting it set but think it'll be much better if I had kept stirring which I'll try next time. Not perfect but a good recipe helped me provide a last minute non-cereal breakfast! Thank you.
