WOW! I couldn't find the brown sugar and wanted to surprise my mom, so I used about a teaspoon of honey and a little sprinkle of cinnamon. Then, I had to replace the apple with banana because of an allergy. I don't know if it still counts as your recipe, but this was delicious and we've already had it twice.

Quite delicious! Very sweet and sugary, the peanut butter is a great contrast, I used extra chunky which added more texture. I think slicing in semi-circles or bite-sized pieces is probably easier than the sliced rounds. My pieces slid off the peanut butter and got a little messy when eating. Make sure to toast the English Muffin, makes it nummy!

We really like this recipe, as written, and all the variations. The last time, I put a crisp slice of bacon between the peanut butter and the banana, and then topped with sauce. Wow! What a great taste contrast.

Wonderful. But, I'm diabetic so needed to make some changes to guard my blood sugar. I toasted the muffins and while still hot spread on the peanut butter. Then combined cinnamon with my store bought stevia/brown sugar mixture. Thin sliced the apples, sprayed them with Crisco butter spray and coated them in the cinnamon mixture. Topped the muffins with the apples. Nuked them 1 minute on high.
