8 bacon strips, diced
1/4 cup crushed cornflakes
5 eggs, lightly beaten
1/2 cup milk
1/2 cup small curd cottage cheese
1 1/2 cups shredded Cheddar cheese
1 green onion, sliced
1/2 teaspoon salt
1/8 teaspoon pepper
2 1/2 cups frozen cubed hash brown potatoes

DIRECTIONS
In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels. Drain, reserving 2 teaspoons drippings. Stir reserved drippings into cornflakes; set aside. in a bowl, combine the eggs, milk, cottage cheese, cheddar cheese, onion, salt and pepper until blended. Stir in hash browns. Pour into a greased 9-in. pie plate. Sprinkle with bacon and the cornflake mixture. Cover and refrigerate overnight.
Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 325 degrees F for 45-50 minutes or until a knife inserted near the center comes out clean. Let stand for 5-10 minutes before cutting.

This was DELICIOUS! A BIG hit for a brunch we had. I used regular frozen hash browns (not cubed potatoes)and liked that a lot! SO tasty--I also added sprinkled some parmesean cheese in it (about 1/4 cup) and it was SO great! My new permanent breakfast recipe! :)

Yummie this was great, I did have to bake it a little longer I baked it at 352 for 30 minutes and then at 350 the last 30 minutes. I also added 1/4 cup parmesen cheese. It also looked very nice.

I had family in town and made this the night before and it was nice to just put in the oven the next morning. They loved it! My cottage cheese hating soon to be father-in-law ate three helpings before I told him cottage cheese was in it.

I made a 9x13 pan of this for a big camping party and it was a real hit - was moist, flavorful and perfect (added a touch of hot sauce, but kept the rest the same). I'll definitely make this again (I bet it would be amazing with spinach and feta....mmmm).

Tastes really good, but I must have used too deep a dish because I had to cook it an extra 15 minutes to get the eggs to set all the way through. By that time, the top was a bit brown, but the flavor was amazing!

Loved this! Didnt need to change a thing! I love that you can make it up ahead of time and bake it the next morning! My husband is usually tough to please and he likes this too! Thanks for sharing!

Awesome! Love that it doesn't have bread in it and everyone thought it was the bomb. Had for Christmas morning and everyone raved. Just put 2 potatoes in the microwave until cooked and cut up for the hashbrown part, everything else as written. Perfect.
