Breakfast burritos are a favorite of my fiance. It's the most requested breakfast in this house! I often add diced green chilis, jalapeno, fresh veggies, or herbs to the eggs for more flavor. This morning I cooked up some breakfast links and cut those up instead of adding bacon. Good base recipe, thanks for sharing! :)

Very good base recipe! Here is the spin that I put on them: I used turkey bacon, and substituted red peppers -thinly sliced- in place of the onions. I also sprinkled some green Tobasco sauce over the eggs before rolling them, and used Pepper Jack cheese. I then topped the burritos with salsa and served them with Spanish whole grain rice. My husband LOVED the dinner! Next time, I think I will try little bits of sausage and maybe tater tots or shredded hashbrowns stuffed into them for breakfast.

These are great! I left the onions out (since my family eats these on the way out the door, onions aren't a great idea!), but other than that I made them exactly like the recipe the first time and my husband and daughter devoured them. The second time I made them, I used 8 oz. of sausage (browned and drained) and they like them that way, too. Note for people who say their tortillas crack - don't use fat-free tortillas. The higher the fat content, the easier they will roll without breaking. The key to this recipe is having the cooking directions - thank you!

these are fantastic, although I do recommend taking them out of the freezer the night before to be slightly thawed, they microwave better that way. a quick delicious breakfast, my kids love them, we make them with sausage also...

These are delicious! I left out the green onions and used diced link sausage instead of bacon. These are super easy to make and quick to assemble the week's breakfasts on a lazy Sunday. I wrapped mine in wax paper, then in foil. Definitely thaw these overnight, and then a quick 60 seconds in the microwave warms them up and you are out the door! Thanks!

I made these for my boyfriend with cut up Turkey Dogs, Shredded White Cheddar Cheese and a Tomato Basil Wrap. He loved them and asked me what the occasion was :-P. I am very pleased with this recipe and will definitely be making them again.

Just finished making these. It took me awhile to cook all the bacon & crumble it. Maybe I should have used my griddle or fried up bacon in 2 fry pans at once. I think sausage would be easier. I set up the tortillas then put the fillings in the middle (didn't use onions). When it came time to roll them up, after I folded the sides they cracked when I folded up the bottom & top. My cookbook said the tortillas should be warmed up first, wish I knew that. I don't know if they should have been warmed, if mine were too dry or if there was just too much filling in them. I had one & it was good. My husband is going to try them tomorrow morning. Anyone have any tips for keeping the tortillas from cracking when folding them up? Thanks.

We loved these! I made a bunch up using a pound of sage sausage instead and egg beaters. My guys were able to take them and microwave them every morning for a quick hot meal on the go. This is great with bacon though and I personally prefer bacon to sausage any day. I serve these with picante. Best with homemade tortillas (they sell them in the freezer/fridge section with the english muffins here) just cook and fill!

This is a great recipe that can be modified easily. Instead of the bacon, I used ham. Also, in place of the green onions, I used vidalias which I chopped. I also added picante sauce and sour cream for more of a "kick." By using an electric fry pan, I was able to make less of a mess and make two at a time. Definitely give this recipe a shot!

Thanks for the recipe! This is great for my teenage son to grab before school so he can have some protein for breakfast rather than just a bowl of cereal. I, like the previous reviewer, also found that the reheating is better if you take the burrito out of the freezer the night before and it will thaw in the refrigerator. I usually add some taco sauce to the inside before heating.

I'm confused. No one seemed to have a problem with reheating the frozen burritos. After 2 minutes on 60% power, they were still frozen in the middle, a good portion of the middle. I spent the next six burritos trying to find a good heating time. The best I came up with is let them defrost in the frig over night, then put in microwave for 5 minutes at 40% the next morning; they were great. My microwave works fine, still can't figure out why it didn't work for me.

Very handy to have freezing/reheating instructions. I made these specifically to have a breakfast food ready in the freezer. They reheat beautifully, tasting better to me that way than when first made. The saltiness of bacon and cheese make added salt unnecessary. While not perfect nutritionally—high sodium, high fat, nitrites, etc.—for around 325 cals you get 20 grams of protein along with that nasty stuff. Throw in whole wheat tortillas and you have a perfectly fine once-in-a-while heat and eat breakfast that beats the pants off of the fast food versions.

I make these often and usually cut back on the eggs a bit,using frozen hashbrowns in there place adding them to the pan after the bacon frys a bit.
