I make these all the time but a little healthier for those that were saying something about the fat content. I use egg sub, turkey breakfast sausage and wheat tortillas with 2% cheese, that and some salsa and you are good to go!

This is a great recipe. With so much room to add to.. Note if you freeze keep the wax paper tight around burrito and you should have no problem reheating at 2 min.

Thankyou so much for posting. I can not eat alot of packaged meals, due to an allegry to many preservatives. I am looking for ways for me and the kids to be able to have that "fast food" This fits the bill for many occassions. I have made pizza wraps, breakfast wraps, and a variety of lunch wraps. Better than any of the store bought, and alot cheaper too.

This is a great recipe, and one we make in the dozens for camping. It's great to get up in the morning and have breakfast all ready sans the heating up! I use the eggs, hash browns, bacon or sausage, and cheese. The one thing I do differently is use the large burrito tortillas, and totally wrap these up like a burrito...I put cheese in the middle and also along spots to use it as 'glue' to keep the wrap secure. My teenagers devour them!

I make a variation of this for christmas morning I bake the egg onion chopped meat and a can of chilis in a 9 by 13 pan then the family assembles the burritos adding cheese sourcream and verde salsa... this all happened accidentally one christmas morning when I forgot the english muffins in the breakfast casserole just put out flour tortillas and add on's and no one was the wiser...

Have to say I like the lunch truck burritos much better. No onion and add potatoes, ham, sausage and bacon and salsa if you like it. That is a meal in a tortilla. Have been making them this way for years.

These are very popular with my grandson and his friends. I did make a few changes. I had some already cooked bacon in my freezer, so I chopped it and mixed it and the onion into the eggs as I scrambled them. My grandson works in a fast food place that makes similar burritos, and he suggested that I put a half slice of cheddar onto the tortilla, then put the scramble on top before folding it up. It's easier and less messy than sprinkling shredded cheese. Now I make them up in advance, wrap them in parchment paper and freeze them in zippered plastic bags. The boys warm them up in the microwave for snacks.

My husband loves to take these to work. I leave out the green onions because he doesn't like them and I sometimes use ham instead of bacon. These are so easy and make a great breakfast.

Great recipe. I used precooked bacon and sausage and I added hashed brown potatoes. Since I didn't have the bacon fat I cooked the eggs in butter and we ate these fresh for fathers day breakfast so I didn't freeze them. They were very easy and tasted great!

Wish I had a nickel for every time I've made these for hubs - this is generally his weekend breakfast of choice. I don't bother freezing them, just make them up fresh each time, varying the additions with what I have on hand at the time. This time I added chopped bell pepper along with the bacon, sweet onion and shredded Cheddar but according to hubby finishing them off with a spoonful of salsa just before wrapping is a must!

I use pork sausage links instead of the bacon. I cook up a small packet of links and then add that to the scrambled eggs. Tastes just as good and a different variation to the recipe. I love the fact you can freeze these!

Breakfast burritos are a favorite of my fiance. It's the most requested breakfast in this house! I often add diced green chilis, jalapeno, fresh veggies, or herbs to the eggs for more flavor. This morning I cooked up some breakfast links and cut those up instead of adding bacon. Good base recipe, thanks for sharing! :)

Very good base recipe! Here is the spin that I put on them: I used turkey bacon, and substituted red peppers -thinly sliced- in place of the onions. I also sprinkled some green Tobasco sauce over the eggs before rolling them, and used Pepper Jack cheese. I then topped the burritos with salsa and served them with Spanish whole grain rice. My husband LOVED the dinner! Next time, I think I will try little bits of sausage and maybe tater tots or shredded hashbrowns stuffed into them for breakfast.

These are great! I left the onions out (since my family eats these on the way out the door, onions aren't a great idea!), but other than that I made them exactly like the recipe the first time and my husband and daughter devoured them. The second time I made them, I used 8 oz. of sausage (browned and drained) and they like them that way, too. Note for people who say their tortillas crack - don't use fat-free tortillas. The higher the fat content, the easier they will roll without breaking. The key to this recipe is having the cooking directions - thank you!

these are fantastic, although I do recommend taking them out of the freezer the night before to be slightly thawed, they microwave better that way. a quick delicious breakfast, my kids love them, we make them with sausage also...

These are delicious! I left out the green onions and used diced link sausage instead of bacon. These are super easy to make and quick to assemble the week's breakfasts on a lazy Sunday. I wrapped mine in wax paper, then in foil. Definitely thaw these overnight, and then a quick 60 seconds in the microwave warms them up and you are out the door! Thanks!
