This was a good start. Next time I'll add a bit more egg/milk and add bacon or some other meat to the pudding itself

This is a great idea for a do ahead breakfast. I used this recipe as a starting point and came up with a fantastic dish. I used brioche, 3 cups milk, 5 eggs, 6T butter, and doubled the spices. I also just threw in the cheese that was in my fridge (swiss, mozzarella, and provolone). So I didn't follow the recipe at all, but it's a great concept you can play with.
