This was very good. There were a few changes that I made, starting with the fact that I also mixed ground pepper in w/the cornmeal mixture, and then I used milk in place of water w/the egg. I lightly browned the chicken, then I sliced a tomato and laid the slices on top of the chicken, then placed the mont. jack cheese on top. I placed the chicken breasts in the oven for approx. 20 minutes. Lastly, I spiced up my sour cream topping by adding Louisiana hot sauce and some chili seasoning to it. I added the avocado slices the last 5 min. of baking the chicken to soften them. My husband loved the chicken (it turned out soooo tender!), and I served it with chipotle rice and some refried beans. Great starter recipe!!!
